[FOOD] mama's eggrolls
My mama was the first in her fathers family to be born in the US from Norway.
She made a MEAN eggroll.
Don't believe it? while on vacation I made a platter of them for a party, and they were eaten within minutes. I only slightly starved the guests waiting for them! haha!
Mama's Eggrolls (makes 16)
- Package of egg roll wrappers (found in the produce section)
- Bag of rainbow slaw mix, pre-shredded (yes, you can shred your own but why?)
- 1/2 pound lean ground beef
- 1/2 pound steamed shrimp
- 4-8 tbls soy sauce (I always have reduced sodium on hand)
- Oil for frying (I like to do it in coconut oil for a good fat, she always used vegetable)
Brown the ground beef well, allowing it to slightly caramelize in color and get a bit crispy, drain.
Sautee the slaw mix, when it starts to wilt cover and add half of the soy sauce. (start with 2 tbls.) Steam for 5 min.
Chop the steamed shrimp (I get them from the fish counter) into small bites so they distribute in the filling well.
In two bowls, divide the cooked slaw. Add the drained beef to one bowl and the chopped shrimp to the other, stir each bowl to combine. Taste at this point and add additional soy sauce to get a flavor you love!
Heat oil either in a pot to fry on the stove of in a deep fryer to 350 degrees. Because your filling is completely precooked, you are only browning the wrappers!
Open your wrappers, remove one, and cover the rest with a damp paper towel. Have a small bowl of water on hand, and simply dampen the 4 edges of the wrapper. put about 4 tablespoons of filling in the center, fold the left and right sides to cover the filling about 1", and roll. THAT SIMPLE! The water acts as glue to hold it all together.
Fry for approx 3 min, flipping half way, and serve hot with sweet and sour dipping sauce!
